2006 Semillon

2005 SemillionWith limited plantings in California, (just 1,068 acres) it is becoming difficult to find Semillon bottled separately. However this is our 14th consecutive vintage release.

This wine features lots of racy lime flavors, and lime zest aromas as well as notes of mango and vanilla. Steely mid-palate with a note of straw in the creamy, lingering finish. A favorite grape of our local wild boar; we have to fight to keep our share!

Winemaker's notes

Crushed directly to the press after an early morning harvest on Oct 20th, cold settled for 24 hours and then transferred to French oak cooperage for fermentation. After malolactic fermentation was complete the wine was aged on the lees for about six months before bottling. This wine can be consumed young, in 2008, or aged for 7-10 years for an extraordinary experience.

Pair with shellfish, especially crab

and crab cakes. RECIPES Also matches well

with chicken braised in wine.

Matches with Cheese

Crottin or Humbolt Fog goat's milk cheese match well.
